Instant Rava(Sooji) Dhokla

Dhokla is a vegan recipe that found mainly in Indian state Gujarat and some parts of adjacent states.
Traditionally dhokla are made-up of fermented batter from rice and split chickpeas. This dhokla and khaman are two similar where khaman made of chickpeas gram and it looks yellow in color. Khaman has become widely popular outside of Gujarat but is misunderstood as Dhokla.
You can eat dhokla at breakfast or in the main course or at dinner
also. But this is mostly fit into a quick light snack. Here we are going to
make this dhokla with semolina (sooji) which is an instant recipe.
These snacks help you out when an unexpected guest comes to the house, just mix
the batter pours it to the steamer and you will get the best dhokla in less time.
This is a super easy recipe for beginners with minimum
ingredients.
So let’s start
Ingredients
- 1 Cup rava/sooji (semolina)
- 1 cup sour curd (yogurt)
- 1 /4 tsp Baking Soda
- 1 tbsp oil
- Salt to taste
For Tempering
- 1 tbsp oil
- ¼ tsp mustard seeds
- ½ tsp cumin seeds
- 1 tsp red chili powder
Method
- Mix semolina (sooji), curd, oil, and salt in a bowl. Mix it well and set aside for 30 minutes. (add little water to make the batter).
- Heat the steamer by adding a glass of water on medium flame.
- Grease the thali or the steamer plate with oil.
- Just before steaming the dhokla, add the baking soda. Stir gently and immediately pour the batter into greased thali. Spread the batter in an even layer.
- Keep the thali in the steamer and cover the lid. Steam for about 12-15 minutes.
- Check with toothpick or knife to see if the dhokla is cooked by putting a knife, if it comes out clean then it's cooked.
- Remove the thali from steamer and let it cool.
- Meanwhile, prepare the tempering.
- Heat oil in a small pan, add mustard seeds ( and cumin seeds when they begin to crackle turn off the flame. Then add red chili powder to it.
- Pour the tempering over the dhokla and cut into square or triangle pieces.
- Serve hot with tomato ketchup.
Note:-
- After adding soda to the batter do not over mix it. Air bubbles should not escape so mix gently
- Immediately pour the batter into greased thali after adding soda.
- Instead of soda, you can add Eno also.
